     Zucchini Bread

Ingredients
1 C oil
3 eggs
1 t.vanilla
1 t. Baking Powder
1/2 t. Baking Soda
1 t. Salt
2 C Sugar
3 t. Cinnamon
3 C flour
 
2 C shredded Zucchini
1 C chopped nuts
Instructions
Preheat oven to 325. Grease and flour 2 9X5 loaf pans.
Beat oil and eggs together. Stir in vanilla
In a separate bowl, mix together baking powder, baking soda, salt, sugar, cinnamon and flour Combine wet ingredients with dry...stir.
Fold in shredded zucchini and nuts. Pour into 2 prepared loaf pans. Bake for 1 hr.
