Combine all ingredients except pork, mix well. Lightly spray
skillet with nonstick cooking spray. heat skillet over medium
high heat until hot. Add pork; brown lightly on all sides. Reduce
heat to low; top pork with half the marmalade mixture. Cover
and simmer, turning and basting occasionally,15-20 minutes or
until meat thermometer reaches 160 in thickest part of pork.
Transfer to carving board, ten with aluminum foil. Let stand 10
minutes. Add remaining marmalade mixture to skillet, bring to a
boil and simmer 5 minutes, stirring frequently. Slice pork and
serve with sauce.
Great served with brown rice and oriental vegetables.
