     Black Bean Tortilla Casserole

Ingredients
2 onions
1 1/2 cup green peppers
14 1/2 oz. diced tomatoes, drained
3/4 cup picante sauce
2 cloves garlic
2 teaspoons cumin
2 15 oz. black beans
8 tortillas
2 cups Monterey Jack
 

Instructions
Combine onions, peppers, tomatoes, picante sauce, garlic and cumin. Bring to a boil. Reduce heat and simmer 10-12 minutes. Stir in the beans.
Spread 1/3 into 9x13 pan coated with nonstick spray. Layer with 4 tortillas and 2/3 cup cheese. Repeat layers; top with remaining beans.
Cover and bake at 350 for 30-35 minutes. Sprinkle with remaining cheese. Let stand 5 minutes.
