     Tofu Scramble

Ingredients
2 T. olive oil
1 block of firm tofu
4 T. tamari sauce
1 medium onion (chopped)
1 c. chopped fresh mushrooms
1/2 medium zucchini (chopped)
1/2 medium yellow squash (chopped)
1-2 medium carrots (chopped)
1 stalk celery (chopped)
 
1 green bell pepper (chopped)
2 tsp. garlic powder
2 tsp. onion powder
1-3 T. nutritional yeast
Salt & Pepper to taste

Instructions
Cut or crumble tofu in to small chunks and soak in a bowl in tamari sauce while preparing vegetables.
Chop vegetables. Heat oil in skillet over medium heat. Add onion and saute until translucent.
Add vegetables and saute until crisp/tender.
Add garlic powder, onion powder, salt & pepper and stir until heated through.
Serving Suggestions
You can use any vegetables and spices you want with this recipe. You can try a Mexican scramble. Wrap in a tortilla for a breakfast burrito!
