     Chicken Fried Steak

Ingredients
2 top round steaks, 1-1¼ '' thick
3/4 c flour
1¼ tsp salt
½ tsp pepper
2 eggs, beaten with 1 tbsp water
1½ c coarse dry breadcrumbs
oil
Butter Milk Gravy-
2 tbsp butter
 
2 tbsp flour
1½ c buttermilk
½ tsp salt
1/8 tsp cayenne

Instructions
Cut each steak in half and pound until thin. Mix flour, salt and pepper in a bowl. Put eggs and breadcrumbs in separate bowls.Dredge each steak through flour then eggs them breadcrumbs. Put steaks onto large plate. Refrigerate uncovered for 20 min-12 hours to set the breading.
To make gravy heat butter in pan over med. heat until it foams . Whisk in flour and cook about 2 min. Whisk in buttermilk and bring to a boil. Reduce heat to low and simmer, stirring often, until gravy is smooth and thick, 7-8 min. Season with salt, pepper, and cayenne. Keep Warm.
Heat 2'' oil in pan over med-high heat to 350°. Preheat oven to 250°. Add 2 steaks to pan and fry until golden brown, a total of 4-5 min. Transfer to a rack in oven to keep warm. Serve with gravy.
