     Chocolate Fudge Cake

Ingredients
2 cup sifted cake flour
3/4 cup hydrogenated shortening
1 3/4 cup sugar
4 egg yolks
2 tsp. vanilla
1 cup milk
2 sq. (2 oz.) unsweetened chocolate, melted
4 egg whites
1/4 cup sugar
 

Instructions
Sift flour, then meausre. Set aside. Stir shortening to soften. Add 1 3/4 cup sugar gradually and cream together thoroughly. Add egg yolks, one at a time, beating after each. Blend in vanilla and melted chocolate.
Add flour and milk alternately, beginning and ending with flour. Add flour in four portions, milk in three. Beat until blended after each addition. Beat egg whites until they form soft, fold-over peaks. Add 1/4 cup sugar in two portions, beating after each until blended. Stir beaten egg whites into chocolate mixtue until blended.
Pour batter into pans lined with waxed paper. Spread from center so batter is slightly higher at the edges. bake in 350 degrees oven 40 - 45 minutes or until cake spring back when lightly pressed.
Remove from oven. Immediately loosen layers from parchment by running a thin spatula around the edges. Turn layers onto wire racks to cools and immediately lift off waxed paper. Cover tighlty are wrap the cooled cake to prevent drying.
