|
-Preheat oven to 300 degrees
-Cut each pepper into 4 boat like pieces
-Put peppers on baking sheet and roast 5 minutes
-Remove from heat and let cool

-Heat EVOO in large pan
-Add onions, peppers, garlic and sausage until
browned
|
|
|
-Remove and put in large bowl
-Add mascarpone and parmesan cheese
-Mix and season with salt and pepper
|
|
|
-Scoop into peppers
-Top with mozzarella cheese
-Bake 5 minutes to melt cheese and garnish with
chives
