     Eight Bean Soup

Ingredients
1/4 cup each (all are dried)
dried kidney beans, lentils, black eyed peas
green split peas, navy beans, lima beans
Yellow split peas, pinto beans
1 Tblsp chili powder
1 tsp garlic powder
1 tsp dried savory
1/2 tsp dried thyme leaves
1 bay leaf
 
2 quarts water
1 can (28 oz) tomates mashed
1 beef or ham bone
2 Tblsp fine pearl barley
2 Tblsp fresh or bottled lemon juice

Instructions
Place the beans in a 2 cup container and package the herbs in a seperate smaller container. Store in a cool dark place away from heat and light.
To prepare rinse beans and place them in a large pot or bowl, cover with water. Soak the beans overnight. Pour off the water.
In a large soup pot combine the beans, water,tomatoes, bone, barley, and spices. Simmer 2 1/2 to 3 hours in a covered pot until the beans are tender.
Add the lemon juice and cook 15 minutes longer. Remove the bone. This is a great gift idea. Layer the dried beans to create contrast colors in jar or mix them in a plastic bag and include the recipe on a card.
