     Oriental Pork Roll

Ingredients
3 lbs pork tenderlion, trimmed and cubed
4 tsp firmly packed brown sugar
1 Tblsp soy sauce
2 tsp crushed dried hot chilies
1 1/2 tsp ground ginger
1/2 tsp garlic powder
1/2 tsp salt
 

Instructions
Preheat the oven to 225 degrees. Spray two 12 by 18 inch sheets of heavy duty aluminum foil with cooking oil. Finely grind the meat in a food proessor. Add the remaining ingredients to the processor bowl and mix well. Divide the meat mixture in half and place each on its own sheet of prepared foil. Roll each meat mixture into a log about 8 inches long. Wrap each tightly in its foil blanket, securing the ends. Use a fork to pric the foil, which will allow steam and juices to escape as the pork roll cooks. Bake in a 9 inch square pan for 3 hours or until the logs seem firm when pressed. When the logs are done but will warm, peel off the foil and blot the meat on several layers of paper towels to degrease. Wrap in freezer paper and chill.
Label and freeze for up to 4 weeks. To serve thaw overnight in the refrigerator. Slice very thin and serve cold on crackers or melba toast. Add a dollop of spicy mustard to each cracker if desired.
