     Caramel Onions

Ingredients
1 c balsamic vinegar
1/2 c olive oil
5 tsp sugar
6 large mild onions, peeled
 

Instructions
Preheat the oven to 425 degrees and grease a covered casserole dish. Mix together the vinegar, olive oil and sugar. Place the onions in the casserole dish and drizzle the vinegar mixture over them. Cover and bake for 1 hour.
Remove the cover, move the casserole to the bottom rack of the oven and bake for 45 minutes longer. Check the oven often to make sure the sauce does not burn. The sauce will thicken as it turns a rich brown. Roll the onions in the thickening sauce to coat them well.
After cooking, cool the onions in the refrigerator, then place them in a clean freezer container, label and freeze for up to 1 month. To use thaw overnight in the refrigerator. Transfer the onions and sauce to a uncovered casserole dish and bake in a 350 degree oven for 20 minutes or until heated through.
