Combine the tomatoes,sugar and salt in a 4 quart saucepan. Bring to a boil and cover medium heat and then simmer for about 30 minutes.
Skim off the foam as it rises with a metal spoon.

Add the vinegar, brown sugar and spices and simmer until thick, about 30 minutes longer or until the mixture mounds up on a cold spoon.
Ladle into sterile jars leaving 1/4 inch of headspace cap and seal
|
|
|
Process for 15 minutes in a boiling water bath canner.
|
|
|
Store for 2 weeks before using to allow the flavors to marry.
