     Canning -Tomato Jam

Ingredients
8 lbs tomatoes peeled, cored and chopped in food processor
2 Tbls sugar
2 tsp salt
1/4 c apple cider vinegar
1/4 c firmly packed light brown suger
1 tsp ground cinnamon
1/2 tsp ground white pepper
 

Instructions
Combine the tomatoes,sugar and salt in a 4 quart saucepan. Bring to a boil and cover medium heat and then simmer for about 30 minutes. Skim off the foam as it rises with a metal spoon.
Add the vinegar, brown sugar and spices and simmer until thick, about 30 minutes longer or until the mixture mounds up on a cold spoon. Ladle into sterile jars leaving 1/4 inch of headspace cap and seal
Process for 15 minutes in a boiling water bath canner.
Store for 2 weeks before using to allow the flavors to marry.
