In a medium mixer, cream the butter and sugar until fluffy. Add the egg and beat in. Add the rum and beat in.

Add the walnuts and zest and mix in. Sift together the flour and baking powder and stir in.

Place the batter in sprayed or greased and lined 8-inch layer pan, smoothing with a spatula.
|
|
|
Bake at 350 degrees for 30 - 40 minutes until a wooden pick or knife tip inserted in the center comes out clean. Cool and remove from the pan. Best if covered tightly overnight, then served. Sift powdered sugar on top just before serving.
