     Ginger Molasses Cookies

Ingredients
2 cups brown sugar
1 1/2 cup butter
1 1/2 cup molasses
2 eggs
4 1/2 cups flour
4 tsp. baking soda
2 tsp. cinnamon
2 tsp. ground ginger
 

Instructions
In a medium mixer, cream the butter and sugar until smooth. Add the molasses and eggs and beat smooth.
Add the flour, baking soda, cinnamon and ginger, and mix thoroughly.
Scoop the batter with a medium sized ice cream scoop onto a cookie sheet. Chill 15 minutes in the freezer or 30 minutes in the refrigerator.
Bake at 375 degrees for 15 - 20 minutes.
