     Chicken Rollatini P3

Ingredients
8 thin chicken cutlets 4 oz each
1/2 cup crushed wasa cracker w/Italian seasons added
1/4 cup grated parmesan cheese, divided
1/2 cup beaten egg
5 oz frozen spinach, thawed and rung as dry as possible
6 tbsp cream cheese
6 oz shredded mozarella, to be divided
olive oil spray
1 cup P3 friendly spaghetti sauce
 
salt and pepper to taste

Instructions
Dry cutlets, season with salt and pepper. Preheat oven to 450. Lightly spray baking dish with oil spray. Combine wasa crumbs and tbsp parmesan grated cheese into one bowl and beaten egg into another bowl. (reserve 2 tbsp of beaten egg and set aside) Combine 1.5 oz of shredded mozarella and remaining parmesan, spinach, 2 tbsp beaten egg and cream cheese.
Lay chicken cutlets down on a working surface and spread 2 tbsp spinach/cheese mixture on each cutlet. Loosely roll each and keep seam side down. Dip Chicken in egg then in wasa crumbs and place seam side down in baking dish. Repeat with remaining cutlets. Lightly spray with olive oil.
Bake 25 minutes, remove from over, top with sauce and mozarella. Bake until cheese is melted.
