     Broccoli Slaw

Ingredients
2 packages broccoli slaw
2 3-ounce packages ramen noodles (with asian flavor)
optional- 1/2 cup extra shredded carrots or shredded red cabbage if you like
1/2 cup slivered almonds
For dressing-
1/2 cup canola or vegetable oil
1/4 cup sugar
1/4 cup vinegar (plain or apple cider)
1 Tablespoon toasted sesame oil
 
Salt and pepper to taste
Garnish- chopped green onions

Instructions
Place the broccoli slaw in a large bowl; add extra shredded carrots or red cabbage if you like and mix together.
Make dressing- combine oil, sugar, vinegar and sesame oil. Add the flavor packet from the ramen noodles to the dressing and mix well. Add salt and pepper to taste, but watch the salt since the flavor packet is pretty salty. Pour dressing on broccoli slaw and mix well. Let sit in refrigerator for at least an hour to let flavors meld.
Meanwhile, break up the raw ramen noodles. Place on a sheet pan with the slivered almonds. Toast them under the broiler for a few minutes until they get golden, stirring occasionally. Watch carefully so they do not burn!
When ready to serve, add the toasted noodles and almonds to the slaw. Mix and top with green onions.
