     Veggie Chopped Liver

Ingredients
5 large onions, sliced
1/4 cup vegetable oil
2 cups canned green beans, drained and rinsed
1/2 cup canned peas, drained and rinsed
4 whites of hard-boiled eggs
1/2 cup walnuts
salt and pepper to taste
 

Instructions
In a deep frying pan, heat the oil to medium. Add the sliced onions and cover for 5 minutes. Stir and saute slowly until the onions are golden brown and caramelized. This will take at least 20-30 minutes. For the last 5 minutes or so, add the walnuts to the saute pan to toast them a bit.
Place onions, walnuts, green beans, peas and egg whites in food processor. Process until smooth, but do not over process. Add salt and pepper to taste.
Chill in refrigerator for several hours.
This recipe doubles well- process the mixture in batches.
Serving Suggestions
Serve with crackers, matzah, challah, or cut up vegetables.
