1. Mise en plase and scale all ingredients
2. Get hot water bath started.
3. In a stainless steel bowl,add sugar to eggs,
stir immediately to prevent the cooking of the
eggs. Add lemon juice.
4. Cook over the water bath while constantly
whisking until thick ribbon stage.
5. Add butter. Stir. This can also be thickened
slightly with gelatin.
6. Place on water bath,covered.
