     Alice's spaghetti sauce

Ingredients
1 lbs ground beef
1 lbs sweet Italian ground sausage
1 lbs hot Italian ground sausage
1-12oz Jimmy Dean hot sausage
1-12oz Jimmy Dean regular sausage
1 bulb minced garlic
6 ribs celery
1 large onion
1/2-3/4 lbs cremini mushrooms
 
1 green pepper
4 bay leaves
15oz or 2 8oz can tomato sauce
120z tomato paste
28 oz can diced tomatoes
11/2 tsp oregano
2 Tbs basil
3/4-1 cup burgandy
2 heaping Tbs brown sugar

Instructions
Brown meats. While meat is browning, process garlic, then add to the meat. Place onion and celery in the food processor and process until finely chopped. Add to meat. Process mushrooms, then green pepper and add to pot. Stir constantly to keep the meat from sticking to the bottom of the pot. Add the remaining ingredients. Stir and cover after the sauce begins to boil. Simmer for at least 2 hours or more. Periodically skim the fat from the surface of the sauce. I like to use the 20% ground beef because the fat adds a richness to the sauce. This is a thick sauce. Add salt and pepper to taste.
