     Peasant Bolognese

  A good Chianti

4 tablespoons olive oil
teaspoon of garlic salt
dash of dried italian herbs
1 sprig rosemary
6 sprigs basil
1 lb hamburger meat or to taste
1 lb ground italian sausage
25 blanched tomatoes
1/3 cup red table wine
Optional ingredients- garlic, or carrots

Turn on Sinatra first. Then... To fry the meat- 1) Pour olive oil in large cooking pot 2) Put dash of italian spices in pot 3) Use your hands to break off chunks hamburger and place in cooking pot. 4) Use your hands to break of chunks of italian sausage and place in cooking pot. 5) Put in teaspoon of garlic salt, rosemary and just three springs of basil. To finish the sauce (in same cooking pot)- 6) After meat is browned, sample the table wine and pour in the cooking pot. 7) Then add 25 tomatoes. 8) Allow to boil for 1.5 hours. 9) Then allow to rest for 2hrs. 10) Add another 3 sprigs of basil and boil for another 1 hr. 11) Then allow to rest overnight. To serve- 1) Add wine, water, or etc. to your favorite consistency. 2) Heat to a boil again and serve warm over your desired entree.

Serve over breads, pastas, vegetables, etc.
