8 chicken drumsticks, bone-in thighs, or a mixture of both (about 3 lb total), skin removed
2 1/2 Tbsp Dijon mustard
2 c fresh whole wheat bread crumbs
1 tsp smoked paprika
1/4 tsp cayenne
2 c store-bought vinegar slaw
Instructions
Heat oven to 450°F. Line shallow baking pan with
foil and coat with olive oil spray.
Pat chicken dry and rub all over with mustard.
Stir together crumbs, paprika, cayenne, and 1/4
tsp each salt and pepper in shallow bowl. Dredge
chicken in crumb mixture, patting to adhere
Arrange chicken in single layer in prepared pan.
Coat tops with olive oil spray. Bake 20 minutes.
Reduce heat to 425°F and bake until golden brown
and cooked through, 10 to 15 minutes longer.
