2 Tbsp sweet pickle juice or (2Tbsp vinegar with speck of cinnamon and cloves)
1/2 tsp baking soda
3 medium onions, quartered
1/4 pound salt pork
pepper (to cover top of beans just before putting in oven)
Instructions
Pick over beans taking out bad ones; Wash
Cover with 3 cups water;
Soak at least 8 hours or overnight.
After 8 hours or overnight-
Add 2 cups of water, mustard, pepper, salt, brown sugar, molasses, pickle juice, baking soda and onions;
Cover and boil until skins of beans wrinkle when a few of them are removed in spoon and blown on.
Heat oven to 250 degrees.
Cut almost through salt pork; put into baking pot.
Cover salt pork with hot beans and their liquid.
Sprinkle pepper generously on top of beans
Baking Instructions-
Cover pot and bake 6 to 8 hours or until beans are tender.
After 2/3 baking time; Add about 3/4 cup water or just enough to cover beans.
Uncover the last 1/2 hour of baking

Serve with Coleslaw or Raw Cabbage sliced and blended with mayonnaise
