6 large bulbs garlic, seperated, blanched and skinned
zest of 1 lemon, peeled in one continous spiral
1 dill head, or 1/2 tsp dill seeds
1 small whole red chili
Instructions
In a saucepan, combine the vinegar, water, salt and crab boil seasoning and bring to a boil. Add the garlic and let steep for 10 minutes over very low heat.
Line a clean 1 pint jar with lemon zest and add chili and dill head. Ladle in the garlic and enough liquid to cover. Cap and seal.
Cool at room temperature.
Allow the flavors to marry for 3-4 days before using. Refrigerate up to 4 weeks
not only is this good for you what ails you and low in calories, but it is also a mellow and delicious appetizer.
