     Canning Provencal Vinegar

Ingredients
1 pint red wine vinegar
1 strip orange zest, 1 inch by 4 inches
1 sprig fresh rosemary
1 sprig fresh thyme
1 large garlic cove, peeled
 

Instructions
Combine all ingredients in a clean 2 cup jar. Seal the jar and store at room temperature in a dark place for about 1 month before using.
Filter into a clean 1 pint bottle. Store at room temperature, tightly sealed, for up to 6 months.
Serving Suggestions
Has wonderful light fresh flavor imported by a bit of orange peel. Use over fresh raw summer veggies or add dash of olive oil.
