     Canning Cranberry Vinegar

Ingredients
1 1/2 c fresh cranberries, rinsed and picked over
1 1/4 c white rice vinegar
3 T honey
 

Instructions
Heat the ingredients in the top of a double broiler over simmering water for 10 minutes. Cool and store in a clean pint jar for 3 weeks in a cool place. Strain the vinegar through coffee filter, pressing out all the fruit juices. Funnel into a clean 1 pint bottle.
Serving Suggestions
Use this vinegar as a dressing base for cole slaw, add chopped apples to your favorite slaw recipe. Different and delicious.
