     Chicken and Vegetable Broth

Ingredients
50g or 2oz butter
1 onion, chopped
1 clove garlic, chopped
1 large carrott, sliced
2 leeks, trimmed and sliced lengthways
2 skinless, boneless chicken breasts, cut into strips
1 litre or 1 3/4 pt chicken stock
salt and pepper
50g or 2oz pearl barley or broth mix
 
1 tsp lemon juce
bouquet garni

Instructions
1. Melt the butter in a large saucepan and saute onions, garlic and carrots until softened. Add leeks and saute for 2 minutes.
2. Using a slatted spoon, transfer vegetables in a bowl. Fry chicken in pan until browned. Return vegetables to pan.
3. Add stock, bouquet garnet, seasoning and pearl barley/broth mix and lemon. Cover and simmer for 30 minutes.
