     Homemade Garlic Mayo

Ingredients
1 (12.3-oz) package extra-firm silken tofu, preferably Mori-Nu brand
3 Tbl. extra-virgin olive oil
3 Tbl. Dijon mustard
2 Tbl. freshly squeezed lemon juice
2 large cloves garlic
1/2 tsp. fine sea salt
 

Instructions
In a food processor, combine the tofu, olive oil, mustard, lemon juice, garlic and salt. Puree tofu mixture until ultra smooth, stopping to scrape down the sides of the bowl as necessary. Make sure that there aren't any little bits of unblended tofu. Taste the mayonnaise, and adjust the seasonings as necessary. Transfer to a covered container and refrigerate for an hour if possible, to let the flavors meld before using.
Variation- You can substitute whole grain mustard for the Dijon. You can also add an extra clove of garlic and cracked pepper for extra zing. For a low-fat version, reduce olive oil to 2 Tbl. and use lite silken tofu.
