Preheat the oven to 375 degrees. Place the potato rounds on a rimmed baking sheet. Toss with the olive oil, season with salt & arrange in a single layer. Bake for 35 min., flip & bake for another 10 min. Transfer to a paper-towel-lined plate to drain.

Meanwhile, cook the bacon until crisp; crumble & set aside. In a med. bowl, stir together the sour cream & cream cheese until smooth.

|
Arrange the potato slices on a platter in a single layer & top each round with a dollop of the sour cream mixture, some bacon bits & the chives. Serve warm.

|
FOR A TWIST: USE SWEET potatoes & top with mascarpone & cinnamon-sugar.
TOP EACH round with tartar sauce and a slice of hard-boiled egg.
TOP EACH round with Mayo & a slice of hot sausage, such as chorizo.
SANDWICH TWO potato rounds with shredded cheeze & melt in the oven.
