     Nanna Zonghi's Passatelli

Ingredients
20 ounces plain bread crumbs
6 cups Pecorino Romano
1 teaspoons cinnamon to taste
14 eggs
3 tablespoons grated lemon peel
Homemade chicken broth
 

Instructions
- Place breadcrumbs, cheese, cinnamon, lemon peel in large mixing bowl. - Add eggs, carefully mix together with your hands until it form soft dough-like consistency. - Allow dough to rest for 10 minutes in a cool place. - Place through a Passatelli machine to create short noodles, aka worms Place Passatelli in a single layer on a board, dry overnight.
- Bring chicken stock to boil. - Add pasta. - Once Passatelli have risen to surface, they are ready. - Sprinkle each bowl with grated Pecorino - Manga!
