Preheat oven to 400f
Lined a baking tray with some aluminum foil.
Get each courgette half and carefully scrap out some of the soft seeded part, so you have some slight dips in each half to fill with you filling.
Place on the baking tray and spray with some Frylight or Pam spray and season with salt and black pepper.
Top each half with your chilli.
In a bowl mix together the cheddar and mozzarella and then sprinkle over each half.
Place in the oven and bake until cheese is complete melted and golden on top.
Top with some fresh chopped coriander.
These are great served with a dollop of fat free plain yoghurt, or if you have some syns spare you can serve with some low fat sour cream.
