     Southern Chicken and Dumplings

Ingredients
2 1/4 to 2 1/2 cups Self-Rising Flour
2/3 cup Buttermilk
1/3 cup Shortening
1 1/2 to 2 quarts Chicken Broth
1/2 cup Milk
1 1/2 cups chopped, cooked chicken
Black Pepper to taste
 

Instructions
In a large mixing bowl combine 2 cups of flour with buttermilk and shortening. Mix well. Gradually add more flour until it forms a very firm dough. Roll out on a floured surfaceto about 1/8 inch thick. Cut into 1 1/2 in ch wide strips.
Bring broth to a rolling boil. Before dropping the strips of dough into the broth, break each strip into small pieces and press each piecew ith the fingers to flatten it. Drop the dough strips into the broth. Reduce the heat to medium and cover pot. Cook for about 15 minuted. Stir occassionally. Remove the lid and add the milk. Continue cooking uncovered until the broth thickens. Stir in chicken and season with black pepper.
