     Basic Viniagrette

Servings   1 cup

Ingredients
1/4 c red wine vinegar
2 t dijon mustard
1 shallot, minced
salt and freshly cracked pepper to taste
3/4 c extra virgin olive oil
 

Instructions
Combine the red wine vinegar, dijon, shallot, salt and pepper in a bowl and mix well with a whisk. Add the olive oil a small amount at a time, whisking constantly until blended. Adjust the seasonings to taste.
