     Apple Oven Pancake

Ingredients
3 large Granny Smith apples, peeled & sliced
1 c. raisins
1/4 c. brown sugar
1 T. honey
1/2 t. cinnamon
1/4 t. nutmeg
2T. butter
4 eggs
1 C. milk
 
1 c. flour
1 T. sugar
1/4 t salt
2 t. lemon juice
3 T. powdered sugar, optional

Instructions
In a bowl, combine apples, raisins, brown sugar, honey, cinnamon, & nutmeg. Melt butter in 12 es. h around edginch ovenproof skillet. Add apple mixture to skillet; saute for 15 or until tender. In a blender, combine eggs, milk, flour, sugar, & salt; cover and process 10 seconds or until smooth. Pour over apple mixture; gently lift apple mixtue, letting egg mixture flow underneath. Bake , uncovered at 425 for 15-20 minutes or until the pancake is puffy and golden brown. Sprinkle with lemon juice and powdered sugar , if desired. Cut into wedges Serve warm
