In a bowl, combine apples, raisins, brown sugar, honey, cinnamon, & nutmeg. Melt butter in 12 es. h around edginch ovenproof skillet. Add apple mixture to skillet; saute for 15 or until tender.
In a blender, combine eggs, milk, flour, sugar, & salt; cover and process 10 seconds or until smooth. Pour over apple mixture; gently lift apple mixtue, letting egg mixture flow underneath. Bake , uncovered at 425 for 15-20 minutes or until the pancake is puffy and golden brown. Sprinkle with lemon juice and powdered sugar , if desired.
