     Pumpkin Bread

3 c sugar
4 eggs
2 tsp soda
1 tsp nutmeg
2/3 c water
1 c chopped pecan nuts(have substituted black walnuts)
1 c wesson oil(any vegetable oil)
1/2 tsp salt
1 tsp cinnamon
3 1/2 C Flour
2 c pumpkin

Beat eggs, sugar and oil. Add water and pumkin and blend. Add dry ingredients and mix. Add nuts. Bake @ 350 F in heavy weight loaf pans or can use 4 - 1 lb coffee cans for 1 hour or until done. Grease cans or loaf pans and fill 1/2 full. After bak
After cooling, remove from pans or cans. Can wrap in glad wrap and aluminum foil and freeze for later use. To serve, slice 1/2 inch thick slices. Tastes better warmed. After warming, I like to spread butter over bread. It makes a good addition to breakfast.
