     Tart Mango Salsa

Ingredients
6 60 8 tomatillos, husked
2 Tbs. pineapple juice
1 Tbs. apple cider vinegar
1 1/2 Tbs lime juice
1/3 fresh jalapeno pepper, seeded
1 clove garlic, minced
5/8 tsp. cumin
1/8 tsp. dried oregano
1 ripe mango, peeled, pitted, diced
 
1/2 small red onion, minced
1/2 small green bell pepper, diced
1/2 small red bell pepper, diced
s/p to taste
chopped fresh cilantro for garnish

Instructions
Blend first 8 ingredients in blender or food processor. Place mango, onion, and peppers in a serving bowl. Pour the puree over and stir to mix. Chill for at least an hour.
Serving Suggestions
Serve with black bean burger
