Preheat oven to 325
In a bowl, combine flour, baking soda, salt & spices. In a mixing bowl, combine sugar and oil. Beat in eggs and vanilla, then stir in chopped apples, and pecans. Add the dry ingredients and mix until well blended. Butter 2 9x5 loaf pans and line bottoms with parchment; butter parchment. Pour batter into pans, smoothing the top with a spatula or spoon. Sprinkle loaves with the cinnamon/sugar mixture. Bake 60-75 minutes until a wooden skewer inserted in center comes out clean.
Cool for 10 minutes, turn out onto a rack. Let cool before serving.
