     Spiced Apple Bread

2 2/3 c. flour
1 1/2 t. baking soda
1 t. salt
2 t. cinnamon
1/2 t. nutmeg
1/2 t. cloves
2 c. sugar
1 c. Olive oil
4 eggs , beaten
2 t. vanilla
4 c. coarsely chopped apples
1 c. chopped pecans
1 T. sugar
1 T. brown sugar
1/4 t. cinnamon

Preheat oven to 325 In a bowl, combine flour, baking soda, salt & spices. In a mixing bowl, combine sugar and oil. Beat in eggs and vanilla, then stir in chopped apples, and pecans. Add the dry ingredients and mix until well blended. Butter 2 9x5 loaf pans and line bottoms with parchment; butter parchment. Pour batter into pans, smoothing the top with a spatula or spoon. Sprinkle loaves with the cinnamon/sugar mixture. Bake 60-75 minutes until a wooden skewer inserted in center comes out clean. Cool for 10 minutes, turn out onto a rack. Let cool before serving.
