     Butternut Squash Ravioli Filling

Ingredients
1 cup roasted, mashed butternut squash (see note)
1/2 teaspoon salt
1/2 teaspoon black pepper, freshly ground
pinch of cayenne pepper
1/2 cup marscapone cheese (Trader Joe's has it)
1 egg yolk
1/3 cup grated parmesan cheese
 

Instructions
Note- Cut 1/2 of a butternut squash into large chunks and brush it with olive oil. Roast in a 375 degree oven for about one hour, until the surface is dry and the flesh is soft. Scoop squash out of the skin and mash it. It is important to roast it or it will be too moist to make a good filling.
Mix all ingredients and blend in a food processor or with a mixer until smooth.
Use for filling ravioli or agnolotti or even as a layer in a vegetable lasagne. Goes well with a light topping such as brown butter sage sauce or pistachio cream sauce.
