     Creamy Polenta

Ingredients
4 cups milk
1 cup polenta (instant) or corn meal
1/2 cup Parmesan cheese
1/2 cup sour cream
1-2 Tb butter
Salt and pepper to taste
 

Instructions
1. Bring 3 cups of milk to a gentle boil. Combine remaining milk with the polenta (corn meal)and dash of salt; slowly pour into boiling water, stirring constantly. 2. Cook until thickened, stirring frequently. 3. Cover; continue cooking on low heat 5 minutes; stir. 4. Turn off heat and add the butter and Parmesan cheese, stir; add the sour cream; stir. Salt and pepper to taste.
If using unprocessed Polenta (not instant) the cooking time is much longer, approximately 45 minutes to an hour on stove top. You may want to use a slow cooker on high for 2 hours, stirring once or twice per hour.
