Make a paste of above ingredients. Spread paste evenly over chicken pieces; stack in a bowl; cover & refrigerate at least 2 hours or better yet overnight. About 1 hour before serving; heat 1 1/2 pints oil in heavy saucepan or deep fryer to 400.
Put about 2 c. mild or club soda or beer in a deep narrow bowl, & dip each piece in liquid, letting excess drip off. Dust lightly but evenly in pancake flour mix. Do not overcoat. Dry pieces after a few minutes without letting them touch each other. Fry pieces 5-6 minutes each. Place on a cookie sheet with out touching. Bake uncovered at 350 for 30 minutes.
