     Savory Stuffed Mushrooms

Ingredients
2 Tbl. extra-virgin olive oil
1 clove garlic, minced
1/3 c. finely chopped onions
1 lb. mushrooms, finely chopped
Pinch of dried basil
Pinch of dried thyme
1 c. chopped walnuts
1 c. cooked spinach, well drained and finely chopped
Pinch of sea salt
 
Freshly ground black pepper
1/2 c. whole-wheat breadcrumbs
16 to 24 large button mushrooms, stemmed and left whole

Instructions
Preheat the oven to 350F. Heat the oil in a large skillet over medium-high heat and saute the garlic, onions, and mushrooms for 10 minutes. Add the basil, thyme, walnuts, spinach, and salt and pepper to taste and mix very well. Remove from the heat and stir in the breadcrumbs. Stuff each mushroom with the filling and place on a baking sheet. Bake for 6 to 8 minutes and serve warm.
