Spread cinnamon sugar on a small plate or saucer. Run the lemon wedge along the rim of 8 champagne glasses, then dip rims into cinnamon surar, shake off excess.
Combine apple cider and schnapps in a measuring cup. Divide evenly amoung prepared glasses.
Pour sparkling wine evenly among glasses. Garnish each with a cherry.
