     Leek Sauce

Servings   makes 3/4 cup

Ingredients
1/4 c (1/2 stick) unsalted butter
1 c chopped leeks
1 c chicken or fish stock
1 c whiskey
1/4 c (1/2 stick) unsalted butter
salt to taste
 

Instructions
Melt 1/4 c butter in a cast iron skillet. Add the leeks. Saute until translucent. Add the stock and whiskey. Cook until sauce is reduced to 1/2 cup. remove from teh heat. Whisk in 1/4 c butter. Add salt to taste if needed.
