     Lemon Garlic Shrimp Stir-Fry

Ingredients
2 T olive oil
1 red or yellow bell pepper, cut into julienne strips
1 med zucchini, cut into 1/2 inch half moon slices
1 lb uncooked peeled shrimp
4 garlic cloves, minced
1/2 c diagonally sliced scallions
6 oz snow peas
1/4 c lemon juice
zest of 1 lemon
 
salt and pepper to taste
1/2 c fresh parsley, coarsely chopped
1/4 c chopped chives

Instructions
Heat the olive oil in a wok or large skillet. Add the bell pepper and zucchini. Stir fry for 3 minutes. Add the shrimp, garlic and scallions. Stir fry over high heat for a few more minutes. Add the snow peas. Stir fry until the shrimp begin to curl. Add teh lemon juice and zest. Stir fry until shrimp turn pink. Remove to a serving platter using a slotted spoon. Season with salt and pepper. Sprinkle with parsley adn chives. Serve with orzo, rice or noodles.
