     Mushroom Sauce for Steaks

Ingredients
2 T minced shallots
1 T olive oil
4 oz skitake mushrooms, quartered
8 oz button mushrooms, quartered
1/4 c cabernet sauvignon
2 T red wine vinegar
1 c beef stock
2 t tomato paste
1 t salt
 
1 t freshly cracked pepper

Instructions
Brown the shallots in the olive oil in a heavy saute pan. Add the mushrooms. Saute until brown. Add the wine, vinegar, beef stock and tomato paste. Simmer for 5 minutes. Add salt and pepper.
