1 1/4 c Wildtree Whole Grain Orange Cranberry Bread mix
2 Tsp orange zest (or zest of whole medium orange)
1 cup confectionars sugar
1/2 Tsp Vanilla Extract
juice of 1/2 navel orange
1 T Finely minced dried cranberries
Instructions
Preheat oven to 325F. Lightly oil (Wildtree grapeseed oil) cups of 24 cup mini muffin tin or use candy size liners. Whisk together egg, oil, milk, and Wildtree Mix. Stir until combined, do not over-mix. Spoon 2 teaspoons batter into each cup. Bake for 10 - 12 minutes or until tops of muffins are golden and small holes/cracks appear. Check to make sure toothpick inserted in center of muffin comes away clean. Let cool 10 min.
To form glaze, in small mixing bowl, combine confectioners sugar, orange juice, vanilla, and orange zest. Mix well to form thick glaze. If too thick, add additional orange juice or water 1/2 tsp. at a time to attain runny glaze consistency. Stir in finely minced dried cranberries.
Once muffins have cooled slightly, drizzle 1 tsp. glaze over each muffin, allowing it to drip down and cover sides. Let glaze set for 1 hour before serving.
