     Carrot-Ginger Dressing

Servings   1/2 cup

Ingredients
2 small carrots, peeled & chopped
1/2 medium shallot, chopped
1 TBS plus 1 1/2 TSP finely chopped ginger
2 TBS balsamic vinegar
2 TSP toasted sesame oil
2 TSP soy sauce
1 TSP sugar
1 TBS extra light olive oil
 

Instructions
1. Combine all ingredients except olive oil with 2 TBS water in a food processor. With motor running, drizzle in olive oil until smooth. 2. Refrigerate; stir once before serving.
