     Pecan Diamonds

Ingredients
1 c (2 sticks) unsalted butter, softened
2/3 c powdered sugar
1 egg
3 c flour
2/3 c unsalted butter
1/2 c honey
3/4 c packed brown sugar
1/4 c sugar
3 T heavy cream
 
4 c pecans, coarsely chopped

Instructions
Line or 9x13 Baking Dish with foil and then butter the foil. Cream 1 c butter and powdered sugar in a mixing bowl until light and fluffy. Beat in the egg. Add the flour all at once. Beat at low speed until the dough is smooth and holds together. Press teh dough into the prepared pan. Prick all over with a fork. Chill for 15-20 minutes. Bake at 375 degrees for 20 minutes or until slightly golden brown. Melt 2/3 c butter with the honey in a heavy saucepan. Add the brown sugar adn sugar. Bring to a boil. Boil for 1 minute. Remove from the heat. Add the cream and pecans. Mix until all the pecans are coated. Pour onto the baked crust. Bake 20-25 minutes. Cool completely. Lift from the dish using the foil edges and place on a cutting board. Cut into diamond shapes to the desired size. Store in an airtight container. Makes 36-50 cookies.
VARIATION- Mixed Nut Diamonds with Chocolate Drizzle, substitute a mixture of macadamia nuts, hazelnuts and cashews for the pecans. Cool bars and then drizzle with Bittersweet Chocolate Ganache (recipe a variation on Chocolate Ganache, in cookbook) over the top. Let stand until set before cutting into diamonds.
