     Tami's Favorite Gingerbread

Servings   makes 9 squares

Ingredients
1/2 c butter, softened
1 c sugar
2 large eggs
2 1/2 c flour
1 1/2 t baking soda
1/2 t salt
1 12/ t ground ginger
3/4 c molasses
1 c hot water
 

Instructions
Beat the butter in a mixing bowl until smooth. Add the sugar adn beat until light and fluffy. Beat in teh eggs. Add the flour, baking soda, salt adn ginger and mix well. Stir in the molasses and hot water. Pour into a buttered adn lightly floured 9x9 cake pan. Bake at 350 degrees for 35-40 minutes or until toothpick inserted into center comes out clean. Cut into squares.
VARIATION- Crumble Topped Gingerbread, mix 2 T flour with 1 T sugar. Cut in 1 T butter until crumbly. Sprinkle on top before baking as directed above. Serve with Lemon Curd (recipe in cookbook).
