     Pumpkin muffins

Ingredients
3 cups all purpose flour
1 tbsp plus 2 tsp pumpkin pie spice
2 teaspoons baking soda
1 1/2 tsp salt
2 1/2 cups sugar
1 can pure pumpkin 15 ounces
4 large eggs
1/2 cup vegetable oil
1/2 cup unsweetened applesauce
 
HALF RECIPE (makes about 10-12 large muffins)
1.5 cups flour
2 1/2 tsp pumpkin spice
1 tsp baking soda
3/4 tsp salt
1/2 can pumpkin
1 3/4 cup sugar and 2 eggs
1/4 c. oil and 1/4 c. unsweetened apple sauce

Instructions
PREHEAT oven to 350° F. Paper-line or grease 24 muffin cups. Combine flour, pumpkin pie spice, baking soda and salt in medium bowl. Combine sugar, pumpkin, eggs, oil and applesauce in large bowl; mix well until blended. Add flour mixture to pumpkin mixture; stir just until moistened. Do no overmix but you don't want a lot of streaks of flour visible. Spoon batter into prepared muffin cups (an ice-cream scoop works well), filling 3/4 full.
BAKE for 20 to 25 minutes or until wooden pick inserted in centers comes out clean. Cool in pans on wire racks for 10 minutes. Remove from muffins tins to wire racks to cool completely. Store muffins in covered container or resealable plastic bags.
VARIATION- Use 1/2 c. of apple butter instead of applesauce; decrease spices to 1 TBSP.
