     Fresh Apricot Deep Dish Pie

Ingredients
3 1/2 c peeled apricot halves
1/4 c water
1 1/2 c sugar
1/2 t nutmeg
1/4 t salt
2 T unsalted butter or margarine
1/4 c slivered almonds, toasted, optional
Grandma Bonnie's Pie Pastry (recipe in cookbook)
1 egg
 
1 T water

Instructions
Combine the apricot halves and 1/4 c water in a saucepan. Bring to a boil. Stir in the sugar, nutmeg and salt. Spoon into buttered 1-1 1/2 quart round baking dish. Dot with the butter. Sprinkle with the almonds. Shape the Pie Pastry into a ball on a lightly floured surface. Flatten the ball to a thickness of 1/2 inch. roll into an 11 inch circle.Roll the pastry carefully around a rolling pin and unroll over the filling. Fold the edge under and flute. Cut vents in the top. Brush with amixture of the egg and 1 T water. Bake at 400 degrees for 15 minutes. Reduce the oven temperature to 350 degrees. Bake for 30 minutes longer or until golden brown.
