Place the lemon juice in a medium bowl. Add the peaches and toss to coat well. melt the butter in a heavy sucepan over medium heat. Add the brown sugar. Cook until thickened and bubbly, stirring constantly. Stir in the cream 1 T at a time. Cook for 3 minutes or until the brown sugar is dissolved and the sauce is thickened and smooth, stirring constantly. Stir in the peaches, pecans and bourbon. Cook for 1 minute or until the sauce is heated through, stirring constantly. To serve, alternate layers of the peach sauce and ice cream in dessert bowls.
